Royal Over-Seas League

The Royal Over-Seas League occupy a prestigious building overlooking Green Park in Central London. They have 70 bedrooms, two restaurants, a bar and a number of function rooms.  Historically they have operated the entire building directly.  However, they recognised that specific food and beverage expertise should help drive quality and sales as well as offering some financial protection.

They therefore decided to investigate the implications of appointing a specialist commercial caterer to operate the food and beverage facilities. Stern Consultancy were appointed to manage this process and to negotiate with a selected shortlist.  The result was that a contractor was appointed on very favourable terms. As a result the League are now financially protected against any under-performance and they have been able more easily to rationalise the operation. Standards have improved and a longer-term contract has just been signed.
